Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?

FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

Anything you buy from a grocery store should be set, and if you get them from the Farmer’s Market or grow your own, just make sure you wash the shell VERY WELL before using raw egg, as this is where most of the contaminate comes from. (The shell isn’t sterile, you crack the egg, the shell contacts the egg and leaves some salmonella behind, the egg is now unsafe)
Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I will probably be doing a post on this in the next few months when I get back to school and am keeping track of exactly how much I spend on what.

Grains and veggies I’m more lenient but never with animal protein. The cheapest way to get high quality meat is share a whole animal with friends or neighbors. The bacon we eat is from a pig I share with another 2 families. Once a year I get 1/3 and freeze it all. The bacon is incomparable to any grocery store bacon. I’d rather it less often.

Oh, that’s weird. Maybe you are reacting to something your weren’t eating before starting this diet? I suggest trying to write down everything you eat and how you feel after every meal and about an hour after the meal and then try find a pattern for the bloating. It took me a while for example to figure out I react with horrible heartburn when I eat tomato sauce. Anything containing tomato sauce is super hard for me to digest.

Making sirloin rolls can be tricky unless you know how to do it, and they’ve provided helpful instructions here so yours will come out looking just like theirs.
